It does seem strange that the sorcerer would use spell components. That said, you can rationalize it. The sorcerer casts spells with an intuitive knowledge of arcane happenings (I guess that's where his spellcraft comes from), so maybe he sees a spider and feels the power rush through him, giving him a hint at what to do. He tries crushing it, but that's not right; then he drops it in a drink and guzzles it, and that kinda works; then he gains his level and realizes all he's got to do is ingest the thing and he can Spider-Climb.
As far as his spellcraft skill goes, I think it works in the same way. He sees a spell being cast, or one in effect, and "has a feeling" that it's a Magic Missile or Illusory Wall. The sorcerer trusts his gut when it comes to magic, so he goes with it.
