Doubt about Familiars and mounts

Because of this entry in the spell description's header: "Range: Touch".

Also, Frank, on the Share Spells thing: you think I can't dismiss a spell that's affecting two targets on one target only? Probably right, I didn't think of that. However, you most certainly can dispel a spell on only one of the targets (using a targeted dispel), can't you?

Why would you think you could? It is one spell. What would keep it going if it is dispelled?

Again, why would you call a Touch spell a touch "range" spell? This doesn't make sense. Is there any place in the books that a Touch spell is referred to a "touch range spell?" If not, then saying a spell that was previously a "Target: You" is now a touch range spell would be inconsistent, the book would simply say it becomes a Touch spell.

Spell Turning
Spells and spell-like effects targeted on you are turned back upon the original caster. The abjuration turns only spells that have you as a target. Effect and area spells are not affected. Spell turning also fails to stop touch range spells.

Dispelling a spell affecting several targets on only one of the targets shouldn't be a question, IMHO. For example, if the whole party is subject to a Slow spell, and they all fail their save; the Wizard casts Dispel Magic (targeted dispel) on himself, since the Fighter, Rogue and Cleric have a bunch of important buffs running; do you think the whole Slow spell would just go away, on the whole party if the Wizard succeeds on his dispelling check?

No. And similarly, a Shared spell dispelled on one target of the spell doesn't dispel the whole spell. Share Spells just allows you to give a spell you cast on yourself an additional target. For example, you could give Shield cast on yourself a second target when Sharing it with your familiar. Haste cast at CL 5 can have up to 6 targets if you cast it on yourself, four party members, and your familiar. And so on.

PHB page 36: Additionally, the druid may cast a spell with a target of “You” on her animal companion (as a touch range spell) instead of on herself.

PHB page 45: Additionally, the paladin may cast a spell with a target of “You” on her mount (as a touch range spell) instead of on herself.

PHB page 53: Additionally, the master may cast a spell with a target of “You” on his familiar (as a touch range spell) instead of on himself.

PHB page 282: A ghostly, glowing hand shaped from your life force materializes and moves as you desire, allowing you to deliver low-level, touch range spells at a distance.

PHB page 282: For as long as the spell lasts, any touch range spell of 4th level or lower that you cast can be delivered by the spectral hand.

PHB page 282: Spell turning also fails to stop touch range spells.

Complete Arcane page 82: Touch range spells cannot be affected by this feat.

Unearthed Arcana page 94: Unlike spell turning, however, the Residual Rebound feat potentially functions against touch range spells as well.

I stopped searching after about two minutes.
