If your players work as a cohesive group, I've heard even lvl 4 characters can kill hillgiants. But I'd go lvl 6 or so.
 

On about 2nd level, introduce the concept of giants to the PCs to set the stage. You might do this as a distant villan, someone who hires the PCs, or even rumors that end up beiong unrelated to the job at hand - but useful later.

By 5th level, the characters *could* handle a hill giant, thoug h I wouldn't recommend it - they're powerful for CR 7.

By 8th level, hill giants (and stone giants?) can be used frequently; leaders should have class levels (War2 or Ftr1).

While they can be advanced to any CR, I'd stop by about level 15.
 

It would depend on the group (how many, what classes and races, how they work rogether?). The CRs are about right. If I'mm using it as a major thing, start early with foreshadow. Have them meet one and lose but are able to escape. Give them the fear of the giants, first. Then allow them some very tough, well earned victories. Build it, make them earn it.
 



low level party

an intellegent low level party with hit Init scores and a rogue to take care of the flank and sneak attacks, or some form of a trap or bluff could let a raging barbarian half-orc with a great axe and surprise kick some lilly white hill giant but.
 

Our DM threw a hill giant at our party of 4th and 5th level characters. Actually, we managed to make friends with it, so that's probably not a good measure, though. :D
