I was always partial to the amphisbaena, myself
 

The yeongno, a Korean dragon-like monster who eats evil rich people. If it manages to eat 100 evil rich people, it gets to transcend its mortal form and become a celestial dragon. A variant, the bibi, plays a flute menacingly while stalking its prey.

My father used to tell the story of the Hobyahs. I think they are originally old Scottish, but blended into English at some point.

They seem a bit like kobolds and rats rather than dogs or dragons. They would come around to steal children and get scared away by the dog. Eventually the owner would tire of the dog always barking and get rid of the dog and then they would come and take the kids.

I know it's basic, but I've always been fond of Heracles' hydra. Also ghosts. Basically anything that requires research and/or cleverness to overcome.
