What saving throws is the monk proficient in? Is it still dex/wisdom like in the playtest? That would make sense but seems like some of them (e.g. the paladin) were changed since then.

Two-handed weapons are strictly labeled as such. A quarterstaff is a Versatile weapon, which can be used with one or both hands and do more damage in both hands, so it still qualifies as a Monk weapon.

Yes, 1st-level evocation, choose acid, cold, fire, lightning, poison, or thunder damage. Requires a 50 gp diamond as a (non-consumed) material component.

I think every class gets one good (Dex, Con, Wis) save, and one not-so-good (Str, Int, Cha) save.

Strength saves are used to resist forced movement, so it seems like a decent choice of a not-so-good save for the monk.
