Yes, let us call forth the big burly man with the big burly stick.

Roger.

Your Raven perches on your shoulder, and the Cleric moves back to stand next to you, and casts Light on his shield, grumpily complaining about 'non Dwarven whippersnappers with those small weak eyes that need light to see,' looking over at the two Humans in the party (and maybe you? Unsure if you have darkvision with your lineage)'.

As the Rogue and Bard step aside, and the Fighter (now with adequate light) advances to the trap door.

He starts to smash it it with his sword, and after a few massive blows over several seconds, manages to completely knock it off its hinges, revealing a long 10' curving staircase leading down to the darkness below.

Suddenly; you all see three pairs of glowing red eyes in the darkness, bounding up the stairs at a rapid pace, as the smell of brimstone and sulphur fills the air!

Anyone with a passive Perception of 15 or more heard the Hellhounds barking over the sound of the Fighter smashing the door, and is not surprised on round 1.

By my reckoning that's the Cleric, Bard and Rogue (who cant be surprised anyway thanks to Alert), leaving you, the Fighter and the Raven as being surprised.

Roll initiative for you and the Raven.

I mean I'm pretty sure every party member would be on high alert for danger as we are trying to open the door, so unless they succeeded on stealth I doubt we would be surprised (though I could respect if they got advantage on stealth from the loud banging)

The Hounds were aware of you guys on account of you guys banging on the door to their room knocking it down (throughout which you were not aware of them). In other words, at the start of the encounter they were aware of you (check), and you were not aware of them (check), possibly granting them surprise.

And at the commencement of the encounter, they started barking. I set the passive DC to hear it over the sound of the Fighter tearing open the door at 15, which 3 PCs managed (Rogue, Cleric and Bard).

That's why those PCs are not surprised. Just before the Hounds appeared on the staircase, the Rogue, Cleric and Bard hear them, meaning they started the encounter aware of the Hounds (so are not surprised).

If Stealth is required (even though the Hounds were down the bottom of a 30' long staircase, 20' away from it, and on the other side of a heavy locked wooden door, in total darkness), they have advantage due to the loud noise, and (being in darkness on the other side of the door) visual perception checks to notice them automatically fail so arguably the DC (if there was one) is even higher at 16 (I set it at 15 to avoid surprise).

Round 1
The Rogue goes first. He's standing next to the Bard and close to the Fighter near the entrance (you and the Cleric are standing 20 back from them).

He takes the Aim action, and shoots his bow, hitting a Hellhound dealing 20 points of damage.

Raven goes next. It's now no longer surprised and can take reactions.

Hellhounds go next. Hound one (the wounded one) bounds up to the Fighter/ Bard/ Rogue and breathes fire. The Rogue passes his Dex save (unsurprisingly) and takes no damage (thanks to Evasion). The Bard also passes his save, and the Fighter fails his. 15 Fire damage (reduced to 3 for the Bard on account of passing the save and his magical armor) and 15 for the Fighter.

After finishing its turn, the Scout Rogue moves 15' back with his Skirmisher ability.

Hound two does the same thing, this time only catching the Bard and the Fighter in its breath weapon. The Fighter passes his save, and the Bard fails his this time. 24 points of fire damage, reduced to 12 each.

Hound three moves up to you (the Raven) and the Cleric and does the same. The Bard makes an attack of opportunity against it on the way (the Fighter cant as he is surprised), hitting and dealing 10 points of damage.

The Cleric fails his save. The Raven is likely dead (but feel free to make a save for it).

Please make me a Dex save.

Dude, notwithstanding your naughty word luck, the Gods are smiling on you for some reason. You can have inspiration.

Spend it whenever.

Familiar passes, but is toast anyway.

You and the Cleric both fail, but the Cleric uses his Absorb elements to halve it. Damage was piddly anyway: 15 damage (only brought back with a 5 at the last roll).
 

Next is the Cleric. He tosses out a Bless on the Fighter, Rogue and Bard.

Next is the Bard. He melees HH1 who the Rogue hit already, and hits (thanks to the Bless). Wanting this over, he spams a 2nd level slot on Divine Strike. Adding an extra 4d8 radiant (its a fiend) for a total of 29 damage, and just killing it.

He tosses a Bardic inspiration die to the Fighter.

After him comes you and the Fighter. You're both no longer surprised and can take reactions.
 

Round 2

The Rogue shoots the one next to the Bard and the Fighter, with advantage and the bonus from bless, easily hitting. His damage is 18 damage (ergh).

Next is the Hellhounds. Hellhound one's breath recharges and it breathes again. The Fighter fails his Dex save (even with bless, he's having a totally naughty word time with his dice as well) and the Bard makes his. Damage is... 29 points! The Fighter takes the full damage (ouch) and the Bard takes 7 points.

Hellhound two doesn't get his breath to recharge, so he bites you (he doesnt like the taste of Dwarf) rolling an 11 +5 or a 16 so a narrow miss (mage armor, bracers, ring and +1 Dex)
 

The Cleric spams his channel divinity, healing 35, all on the Fighter (who had taken 56 damage).

The Bard wails on the HH in front of him and misses (yes, even with bless).

It's your turn. The HH in front of you and the Cleric has taken 10 damage, and the one in the front fighting the Bard and Fighter has taken 18.

What do you do?
