I like 4e's take on the Minotaur, because they could've easily gone "hur hur Tauren, y'know!", but instead they remained faithful to the critter's mythological and D&D roots and brought it along for the ride. I really dig it.

But I had to vote deva, because as cool as the minotaur are, the deva are about four times as cool. Perfection, reincarnation, connections to rakshasa, yes yes!
