Well, I also hope it's not another Kirk/Spock rehash at this point.

A new crew could be fun. It could be set in any era of Trek, even.

An interesting idea that I think could be revisited with a recasting or getting the old actors is showing something that the NX-01 was up to between the second to last episode, and the last episode of Enterprise.

There's years worth of stories there that have not been told.

My vote (not that it's being counted) would always go toward "New Cast, New Ship" - though introducing all of that might take some time from a movie, and might work better in a show. OTOH, I think that it should NOT go counter to typical Star Trek tropes, and therefore you'd be saving a lot of runttime by not needing to explain the basic premise.

All you need to do it have a good conflict (preferably one that can be solved through some form of "doing the right thing"). It's okay for there to be action, but it should be in support of doing the right thing, as opposed to action-conflict being the main driving theme.

I'd love to see a depiction of the Earth-Romulan War. Or the period between the founding of the Federation and Discovery. Or the Lost Era between the Classic Films and TNG. Or the last couple decades before Picard.

Lots of options.

What if it’s a whole ship full of just Ortegas?
The transporter gets a virus and starts spitting out copies of Ortegas until it fills the ship with them.

Is the “Year One” SNW spin-off still just something that the actors want to do? I, for one, would like to keep watching this cast play Kirk, Spock, Chapel, etc.
