I’ve been out of brewing and, and going to brew pubs for about 5 years, what’s a pastry stout? Like a sweet doughnuty stout?
It's a stout--usually an imperial stout--brewed with adjuncts intended to evoke the taste of pastry. Chocolate cake (Mexican cake was a thing for a while) is common, I've seen gingerbread and carrot cake and cookies. I dunno if pastry stout's the trend it was a couple-few years ago, but I see it around some.
 

One of the worst beers I’ve ever had was Shiner’s Birthday Beer (I think some intention of a chocolate cake beer vaguely looking like a stout) some 6 or so years ago, still remember how awful it was, which I suppose would be a very bad, because Shiner, take on the genre even if an early entry. I can appreciate pretty much all types of beer, but adding stuff beyond the std ingredients is always, for me, whatever, bleh.
