I think you'd most likely need to find some low-tech labor job at a small business with a luddite owner. There are some bars and restaurants and cleaning, maintenance, or trades companies like that.

A general laborer, is not going to need a computer or touch screen I hope.

A shovel, a rake, maybe a hammer? Good to go.

You might have to 'clock in' on an iPad/equivalent, but otherwise likely not. But even a gardener/groundskeeper or the like these days might need to look at the watering schedule online or the like. Absolute purity of no computers is getting really hard to do in most places, but you can probably find lots of jobs where the amount or complexity of the computer work is incredibly minimal.

The contractor we hired this past summer to redo our driveway and sidewalk had an iPad he used for jobs. One of the things he used was AI image generation to show us a few examples of what our sidewalk could look like.

The workers he brought with didn't seem to have to use any technology for their work.

We bought a house this Spring, and our inspector used an iPad. He was able to go over everything with us there at the house from it, and then emailed us a nice collection of photos, and even a slideshow covering everything he went over during the inspection meeting.

Tech is making it's way into a lot of areas.

Maybe some self-owned craft, but it'd be hard to market your services.
 

Yeah, maybe a little mom and pop style restaurant. There's a few of those near me. Just got pizza with my partner and her parents Monday and the waitress took our order on a little order book and gave us a hand-written receipt. Cashed out at a traditional cash register.

Trying to keep supplies coming in without interacting with computers at all would be a heck of a challenge.

Sure, someone, somewhere in the business will need a computer.. But we're talking about a single position here I think. Someone wanting to disconnect with tech could potentially be that server working their low-tech job and not also be the person handling orders and invoices.
