Man, it's been another just brutal week, and there are still a few days to go, but I'm so deeply envious of people who can really execute a vision and have their naughty word together enough to get it done.

Most starchy foods are neutral enough in flavor that they’re interchangeable for a lot of culinary purposes.* I’ve had noodle dishes turned into baked potatoes, rice dishes served on noodles, bagels turned into pizzas, pizzas turned into pastas, potato dishes turned into sandwiches, etc.





* in our kitchen, we call them “flavor delivery systems”
