It's pretty simple really. What is real in the gameworld is up to the DM, and what the players think they know is only what their characters percieve.
Hence - if a players says their warlock has made a pact with an angel, and acts all nicey and good, then thats them sticking within the terms of their pact.
If he acts evil and callous, and his pact didn't break - then the angel was a demon or a devil, or something else tricky and turning the character evil and callous was all part of the plan, and it's hidden in the fine print of the deal.
Which is also the reason that not everyone marches down to their local servitor recruitment agency.
