I have a sorcerer in a game I'm running specifically the dragon of icespire peak when my party was fighting the Ochre Jellies I found the cantrip Ray of Frost to be a game breaker, the sorc cast ray of frost then moved backward, an ochre jelly can only do a melee attack meaning the sorc could keep casting until ochre jelly was dead without the chance of ochre jelly attacking back any ideas?

Yep, looks like Ray of Frost is excellent against monsters with a low movement rate (as long as you have room to move).

There are always more monsters, and most won't have that limitation (and sometimes, even if they do, terrain works against you).

You can let the PCs have the win here and just give the dragon at the end some more actions- that is the fight that will matter and the players will remember.

Ideas for what? I see nothing wrong with what you have described. What is the problem that you think needs fixing?

There's always MORE Ochre Jellies, you can kite 1 but surely you can't kite 20 all at once.

Or you can throw the Super Ochre Jelly at them, it has flying, telekinesis, and fireball.

Sorcerers don't get many chances to shine. Let your player have that win...

I remember using ray of frost to keep a helmed horror away from me and the other PC still standing. Missing was not fun since I think they were able to catch up to me once of twice and get a hit in when I left their reach. We managed to whittle it down and eventually kill it, but it took a while.
