Tabasco Sauce: Whats your favorite kind?

I myself prefer the Frank's Red Hot Chile and Lime flavour.

before I moved out west, there was a great little shop called Job's House of Pepper. He had pepper sauces from all over the world and he even went so far as to stock them according to the "heat" level.

My favorite hot sauce would be Shrirracca (sp?) sauce. It comes in a large squeeze bottle with a green top and a rooster on the front. You can get it at Asian markets. Pretty darned hot stuff, but very flavorful. I use it on most things where hot sauce has any excuse being. I think it is related to Sambol Asli, the killer Indonesian hot sauce.

Shriracha Sauce. We just call it "Rooster Sauce" or *AHEM!* ":):):):) Sauce". :D It's quite a bit thicker than the standard red pepper sauces and it has an underlying sweetness to it.

Mix it in with a bit of crab salad... Yummy yum yum. Makes a good spread for sandwiches or crackers... Or roll it up in seaweed and rice for a homemade sushi roll.

It's also surprisingly good just dabbed onto corn chips.

Do remember to be careful with the stuff! I've known people literally black out after putting too much on thier food!
I have to be careful with regular Tabasco Sauce. Too much of it can give me bad indigestion.

Among the sauces actually made by Tabasco, I do like the Chipotle one best for flavor, it's not as hot as regular tabasco, actually kind of mild actually, but it has a great flavor.

I've enjoyed Tabasco (red) for years- I'm from New Orleans, after all- and discovered the green about a year ago...its not too bad.

Of course, if you look at the label, you realize you could make the stuff yourself. Normal Tabasco is just red pepper, vinegar and salt.

Actually- salt is a major ingredient in most of 'em, so if you're like me and you're a salt-dependent hypertensive, you don't buy too much of the commercial stuff, and just add the ingredients of the ones you like to whatever you're cooking...
