How does your group use the optional class features in Tasha's?

We use all of it and were allowed to rebuild PCs to incorporate optional features.

I think the cookie cutter races I would be reluctant to allow but would do so for story rather than power gaming purposes. We've already done it in the past. The class stuff will be adopted sparingly and added either after a level up or downtime.

The subclass swap is something we've always allowed with in-story justification.
