Yeah yeah, I get, Ashoka Tano is pretty interesting and all, but I am still seeing no Mandalorian stats. What's that about?
And what about Baby Yoda or Thrawn?

Thrawn has probably been statted out in the SWSE game already. I don't have the books with me but Lil' Yo might just be a nonheroic NPC with force sensitivity and the strong in the force feat. What training he had has atrophied so probably isn't even trained in Use the Force at the moment.

His stats are in The Force Unleashed Campaign Guide.

Old stars though. I did stat him up once noble/soldier/officer iirc. Around level 17.

Force Unleashed
Noble 3/Soldier 4/officer1
Str13 Dex 15 Con 13, Int 17, Wis 12 Cha 16.

That's a young Thrawn though so would just level him up in officer class.

Baby Yoda level 1 Jedi or something like that. Or a pile of non heroic levels, forces sentivity+training+skill focus.

Mando soldier4/scout3 and some combination of bountey hunter and elite troopers.

Same. You can qualify for Jedi master though without any levels in Jedi or Jedi Knight.

PrCs aren't required or Jedi Master either. You can also be Jedi 7, Jediknight 10. You would be one of the best duelists in the order.

I'm not convinced Ahsoka has force adept levels either. That's more force wizard type build.

It's not a question of 'builds'. A Jedi 10/ Jedi Knight 10 is not a Jedi Master 'in game'. They're a person who has (for whatever reason) chosen (or been forced) to remain at the rank of Knight.

She's clearly displaying some unique Force techniques. Her assessing of Vader looked like a Sense talent (as did her assessing of Grogu and peering into his past), and she has that Guardian Spirit Bird thing (Moiri) follow her around which manifests and helps her out (she got it after dying and being reborn from the Force spirit 'the Daughter'). She also learnt some tricks from that giant Force Moose thing Bandu as well.

So Im seeing some Sense talents in there, plus some talents from the Guardian Spirit Talent tree.

She also 'cleansed' 2 corrupted crimson khyber crystals which she picked up from an Inquisitor to create her white bladed lightsabers. That's easily fluffed as her using the Attune and Empower weapon Force Adept talents, and it's not something we've ever seen any Jedi ever do.

Already posted above, but this is how I have him:

Din Djarin
Male Human Soldier 3/ Scoundrel 1/ Scout 3/ Elite Trooper 4/ Bounty Hunter 3
CL: 14
FP: 5, DSP 3, Destiny 1
S: 15 D: 16 C: 16 I: 12 W: 10 Ch: 10
F: 35 (DT 40)
R: 36
W: 25 (30 vs Persuasion and Deception)
DR: 4/- (lightsabers do not ignore this DR)
Talents: Armoured defence, Improved armoured defence, Second Skin, Armoured Mandalorian, Improved initiative, Keen shot, Hunters Mark, Hunters target, Dastardly strike
Feats: Armor proficiency light, medium; Weapon proficiency: Pistols, Rifles, Simple, Vibro weapons; Vehicular combat, Double attack [pistols], Shake it off, Skill training [intimidate], Charging fire, Mandalorian training, Martial arts 1, Point blank shot , Improved damage threshold, Rapid Assault, Unwavering resolve
Skills: Pilot +15, Mechanics +13, Endurance +15, Initiative +15, Perception +14, Intimidate +12
Gear: Mandalorian template Beskar'gam Armor (Medium) with helmet package and integrated flamethrower, grapple launcher, whistling bird launcher (Ref +8, Fort +3); Jetpack, heavy blaster pistol, Ambian Pulse blaster rifle (SS, 3d10 energy damage, Disruptor, Rifle, Accurate) with targeting scope, vibro blade, 2 explosive charges, utility belt

Whistling bird launcher: Standard action area attack that targets all creatures within 5 squares of the firer; dealing 6d6 piercing damage, or half damage on a miss (unless the target has evasion).

He has 1 x Mandalorian talent (that lets him increase his DR, which is effective vs Lightsabers on account of Beskar construction), and the Charging Fire and Mandalorian training feats (that lets him charge and attack with guns at +2 to hit and Will defence) which represent his Mandalorian training. The Unwavering resolve feat represents his stoic nature (and helps out his lowish Will Defence). The rest are pretty stock standard Bounty Hunter/ Tank and Armored build feats (Second Skin talent was particularly appropriate).

Empowered lightsabers are funny. As I said you can build a better Jedi without Jedi knight.

Her purification thing yeah I could buy that as empowered lightsabers.

They're both likely Attuned and Empowered lightsabers (Requires 3 levels of Force Adept) which grants a +1 Force bonus to hit with them, and +1 dice damage. This also nets her 1 Force Technique (Force point recovery is the standard first choice) and thus qualifies her for Force Disciple.

To represent her training in Jar'Kai I simply gave her a few Jar'Kai Lightsaber form force powers from the Jedi sourcebook (plus the Dual wielder feat line).
