You see many references to Mind Flayer arcanist, and Alhoons. If a player were to make an Mind Flayer Wizard, where could he find a template to make this work?

The Monster Manual, p. 188 has complete stats for a Mind Flayer as a PC. It's more or less unplayable with its 8 aberration hit dice and level adjustment of +7 (i.e. your first class level would be your 16th character level...). Here you can find a homebrew Mind Flayer without racial HD and with a level adjustment of just +1. It's seriously OP, though.

If you're not asking for a way of creating a Mind Flayer PC, but want to add class levels to a monster your group will encounter, use the rules found here and here. For example, a 6th level Mind Flayer Wizard would have a challenge rating of 11, get everything a Mind Flayer gets, and get everything a 6th level Wizard gets (spellbook, familiar, bonus feat). It would have 14 HD (8d8 + 6d4 + 14xCon mod), use the elite array for ability scores (basically add +4, +4, +2, +2, +0, -2 to a standard Mind Flayer's ability scores), get feats 5 feats and a Wizard bonus feat, and get (2 + Int mod) x 14 skill points. Its BAB would be +11, its base saves would be +4, +4, +11. And so on.

Hope that helps.
