Alton's very cool. I got to meet him at a book signing a few years ago. He said he'd sign "anything that's non-living", and proved it by signing my friend's baby stroller -- "Shall I sign it on the landau?", he joked, as he flipped down the stroller's canopy to sign.
What I like about "Good Eats" is that it's not about the recipes so much as helping you understand the science behind why cooking (and food) works the way it does. That, and Alton's background (he used to direct TV commercials and corporate films) and sense of humor lead to a show that's extremely entertaining, even if you're not particularly interested in cooking.
