For me it is athletics. The reason why is when I am taking expertise it is generally on an 8 strength Rogue and without it I can't climb well, which is like one of the main jobs of a Rogue. Gives some good grappling uses when necessary as well (although hindered a bit by the low strength).

Others I like but not nearly as often are Stealth, Deception, Persuasion, Investigation. On a Ranger I like Perception.

I've taken Thieves Tools expertise more often than anything else. Perception and Investigation are probably tied for second. They're skills I use often for many characters and they represent the skill checks I like passing/hate failing the most.
