What would you Play?

I'd go Elven "Knight of whatever". I can't remember? Celene? High Forest?

Just for the coolness factor really. Not because they are "best". Get Mithral BreastPlate, take a Leadership feat and grab a decent mount (pegasus, unicorn, dragon), and dabble in mounted combat, archery, and two-weapon fighting. Look for decent PrC's that match that concept. (Never read Bo9S) Don't over-specialise in any single style.

Including racial mods:

Dex 18,
Con 13,
Int 14,
Wis 13,
Cha 11

Multiclass Fighter/Ranger/Rogue to acheive best fit to aspired PrC.

If you want a PC with a dragon mount, I suggest a halfling paladin. The size alone will help you to get that dragon earlier and you'll have better saves than anyone else.

Crusader1/Cleric2/Crusader2/Ruby knight vindicator2/Crusader1/RKV the rest.
Very good fighter (only 1 point of BAB lost), poor caster (but the buffs and healing helps), and the stances and manouvers are very nice indeed. The specials associated with RKV are very nice indeed.

Any build ending in pious templar X/battlesmith 1 can be great.

Crusader X/Knight of the Chalice or Crusader X/The BoED class that goes after evil dragons.

Frankly, a crusader is the best tank there is right now. Dips into fighter or barbarian can be worth it (it depends). Some PrC are good just to get stances earlier (yes, it is odd, but that's how the class is set-up) But a pure Crusader does just fine.

I have a secondary character in mind who is a tank. Go with a Human Incarnate from Magic of Incarnum. To truly tank, be Neutral Good. It's easy to have an AC over 20 at level 1 without really doing any min/maxing (if you're afraid of that).

For the first few levels, you'll actually be surprisingly effective depending on what soulmelds you shape. At later levels, even other magic items, it wouldn't be difficult to have an AC in the 30s. WITH magic equipment, it would get a whole lot higher. They have a d6, but CON is the main thing to increase and get stat boosters for, plus they get a soulmeld that can give you a TON of hitpoints. It's easy for a 20th level Incarnate to have as many hitpoints as a Fighter, if not more. That's a true tank. Damage output could be low depending on your focus, too, but there are resources for finding out how to be effective.
 

Take a level of Battle Sorcerer, then four levels of barbarian. Then go Dragon Disciple. 16 in strength and con, 11 in cha, divide up the rest however you want. Sure, it isn't a TRUE tank, but you'll have a crap-ton of hp, and be strong enough to do pretty much anything you want, melee-wise.
Have him learn shield, which stacks with his armor (try to get him a +1 or +2 mithral breastplate if you can), and true strike, for those moments when you wanna use a full power attack.

Aim for Champion of Corellon Lorethian PrC (races of the wild).

I'm fond of placing Int high in fighters, to get a good number of skills (Tumble, and Balance to 5) but this aids in those quirky Diplomacy and Know (religion) requirements here as well.

Requirements are: +7 BAB, Diplomacy 4, Knowledge (religion) 2, All martial weapons & heavy armour, Combat Expertise, Dodge, Mounted Combat, weapon focus Long sword or Exotic weapon Elven thin/courtblade.

2nd level of PrC allows you to add Dex mod to damage, in addition to Str mod. Later you also gain better than normal benefits from your high dex, even when wearing heavy armours.

This PrC is really quite good, as you also gain the benefit of Good Will & Fort saves, bonus feats, and full BAB.

Possible Feat/Level progression:
1st: ExWpn:courtblade (1d10 18-20/x2)
Ftr1: Finesse
Ftr2: Power Attack
3rd: Mounted Combat
Ftr4: Combat Expertise, +1 Dex
6th: Leadership (mount)
Ftr6: Dodge
8th: +1 Dex
CoC1: Ride-by-Attack
9th: WF:greatsword (courtblade counts as greatsword), Elegant Strike, (you gain Dex bonus to dam, in addition to Str x1.5))
CoC3: Armour's max Dex bonus increases
CoC4: Mobility
12th: WS:greatsword, +1 Dex
CoC5: Armour type does not impede movement.

So not only does increasing your Dex improve your ability to avoid damage (max Dex bonus from armour increases), it also increases your chances to hit (finesse), and Damage (Elegant Strike). Delay access to the PrC by a level, dump one level fighter, and pick up two of Rogue: Evasion, and sneak attack damage.

Mobility is the kind of feat that you barely notice when you gain its benefit, and so gets bad rep. As a DM, it and Spring Attack are highly aggravating. Spring Attack may not be so useful for a Tank, but Mobility helps has its uses.

You're not the real diaglo. You are some kind of construct made from snow or ice, having only 51%-60% of the hp of the real diaglo, and only 35%+(5d6%) of the knowledge and personality of diaglo.

Forgot to mention one of the very few houserules - the DM gives rangers d10 for Hit Dice.
Champion of Corellon might not be allowed - is Corellon a greyhawk deity?

Also, I'll have to ask how much out door adventuring we will have.

That being said, these are some great ideas - and I am going to read up on the crusader this evening.
