Yeah, if they can pull off even a semblance in 7 seasons, thst would be a pretty impressive feat of editing...but it is feasible. I'm not super duper pleased with the shortcuts they have made to get there but given the constraints of their medium they may be necessary.

The showrunner has an 8 season plan, but has alternative plans as well if they don't get that many.

The real issue is that he wanted 10 episodes a season and not 8, which would really allow things to breathe a bit. Don't get me wrong, they are getting most of the important beats and plot points, but things could be a bit less rushed....

My main question with Lanfaey was....what was her plan with the "fake Coracan?"

I mean....the plan never had a chance of working. The second Rand flexes that dragon magic everyone is going to know he's the one. My thoughts are either:

1) Lanfaey wants to make Rand channel as much as possible to try in the madness
or
2) Lanfaey just wanted a distraction for Rand so she had more time to kill Morgaine.

either seems plausible enough but not sure what her thinking was there.
