an elf is not merely ears
It's IME usually what people mean when they talk about "space elves." See Vulcans.

Even apart from the ears, I would say that Minbari are pretty different from elves apart from being an "elder" race that is more advanced than humans, in part due to how their society is structured through their caste system. Minbari aren't depicted as more graceful or dexterous than humans. Minbari are stronger and more durable than humans, though they don't often show that in the series.

The Wallop from the Storm Hawks cartoon. They bear a slight resemblance to an anthropomorphic rhino. You can probably guess why they are called Wallops. ;)

My first reflex would be a dismissive "space Elf" too but I suppose a case could be made for Minbari being more an enlightened space Orc :P - maybe something like the Irda of Dragonlance, a strong but arrogant and potentially brutal species with high intelligence and an enlightened culture
