Besides Wee-Jas, my favorite "made-up" death diety's are from Mark Smylie's Artesia series/rpg.
Djara Luna - the Moon Goddess of death and darkness, the queen of ghosts and dark magic, the giver of lunacy and nightmares, the keeper and revealer of secrets: goddess of crossroads, curse magic and divinations. Also called Urgale or Morgale.
and Geniche - Queen of the underworld and once Goddess and Queen of the Earth, the giver of life, and, with her sister Geteema, the mother of all within Yhera's creation. The Earth was once a Paradise until, in a moment of grief and anger, she abandoned the world and fled into darkness. She created the Underworld and spoke the First Law, mandating that all born of her Earth must follow her into Death.
But Death from the Endless and Chuck Norris get two hooks.

In Eberron, the death god is the Keeper. His portfolio includes greed and he's portrayed as hungry for souls as well as wealth.
I agree with those who have suggested that the Blood of Vol is the coolest death-focused religion. I love the fact that it's both a perfectly reasonable (if grim and creepy) faith followed by many ordinary people and contains a secret core devoted to a very real Queen of the Dead.
