D&D 5E 20th level Sorcerer vs the world

I am assuming, for the sake of getting this nonsense moving again, that the sorc somehow found a Nightmare hanging out in a dungeon somewhere. He wandered around until random encounter tables came up with what he wanted, I guess.

Sorc is now sitting on a pissed-off flying demon horse. GO.
Is It my turn?

I have, if you are willing to go with my rulings, established that the Nightmare is hostile and not amenable to being negotiated with by anyone. It's not the horse's turn, though.

Casting the spell is imperceptible, but the spell's effects are not. The nightmare knows it was subject to Planar Binding.

Choose: Falling or riding an unwilling mount. Or, admit defeat.

I'd say he's also aware that the effect of the spell was to dispel the binding magic since he regained free will. Nightmare are INT 10, like an average human, he knows that he was compelled to obey.

Seriously, this is not anywhere close to working, because, as I expected, Hohige is just trying rules-lawyer his way out, and predictable dice rolls aren't really realistic, since the possibility of failure is always there, even with high bonuses. You guys want to start over with me DMing?

Yes. From scratch, including positionning (because at this point I have no idea of our altitude).

DM's ruling: Nightmare is pissed off, and hostile to everyone and everything around it. It acts on its own initiative (3, IIRC).

In case you missed it.

Not, It's deception vs insight sorry.
Mentally compelled as mount as they always do.

. As noted in the Player's Handbook, you normally don't know that a spell has been cast unless the spell produces a noticeable effect.

I dont care, the DM is your friend here.
But, your Sorcerer is cool.
