D&D 5E In a (hypothetical) Tales from the Yawning Portal 2, what are the adventures you would want updated for 5E?

Ghosts of Saltmarsh has seven older modules, not just one.
If by "seven older modules" you mean "three classic adventure modules, which form one complete storyline, and four add-on adventures from Dungeon Magazine". (In other words, to-may-to, to-mah-to.)

Goodman Games has specified that there is a list of modules they can use, and those they can't...because WotC has plans for them.
Interesting! Though considering some of the high-profile modules Goodman has tackled, one has to wonder what big modules would be left for a Yawning Portal 2...

The Slavers Series, Lost Caverns of Tsjocanth, Temple of Tharizdun, Isle of the Ape, still plenty

Yeah. For a 1-3 level module its incredibly lethal considering how skimpy BECMI was on hit points. Back when dragon breath damage was equal to the thing's current hit points.
Agreed - should have been 3rd-4th not 1-3 I'd think. Would work as 3-5/6 in 5e too.

Bone Hill (L1) and Assassin's Knot (L2) as a single mega adventure would interest me.
Yeah, these two adventures were really good. There was an L3 - Deep Dwarven Delve in the 25th anniversary set, but I haven’t played it. I think an L4 was made as well by the original author (Lenard Lekofka) at some point, but I don’t know if WotC has the rights to it. Anyway, a Lenore Isle expanded campaign book would be nice.

L4 is more like a campaign setting. It's full of details and descriptions. It is very dense and would need an editor. I doubt WoTC has the rights to L4. You can find it on the Dragonsfoot AD&D fan site.
 

They've already taken from Dungeon in building Ghosts of Saltmarsh out, and there are a lot of gems from multiple editions throughout its history. I didn't pay as much attention to Dungeon as I did Dragon, so I certainly would appreciate an updated, curated volume.

Plenty of old Dungeon Adventures they can update.

Not many people overly familiar with them.
