The Acrobatics skill would be strength IRL though. So would all attacks, except maybe attacks using a firearm or something like that.

That just depends on definition. There is no real world equivalence. It is all an abstraction.

It's also foot eye coordination, foot hand coordination, leg leg coordination, torso head coordination...

It's just all coordination.

Same for Strength. We don't have grip strength, leg strength, bite strength.

Remove proficiency bonus.
Everything is now a combination of 2 attributes..

Parkour is now d20 +Str + Dex
Swimming is now d20 +Str + Con.
Stealth is now d20 + Dex + Wis.
Performance is now d20 Cha + Dex

Yes. But. Dex factors into breaking from a grapple.
I think the issue WOTC is grappling with here (pun lamely intended) isn't PCs at all. So many monsters grab PCs. Sometimes leading to a potentially deadly swallow but even without that ominous threat it's very often combined with some other sort of hideous bite from them that's harder to avoid due to some grappling tentacle or other grasping appendage.

If you limit escape to strength, now at least half of the party can't escape. Probably more.

Now maybe that's the intent here. Maybe that's going to encourage people to build their PCs with higher strength scores. I just suspect that's what is at issue with the rule - not the PCs grappling foes, but the monsters doing it.
 

Agility is how you gain more AC, which is dex. Strength will never be agility without a house rule defying any semblance of reality.
Um, the highest non-magic ACs are done with strength. It's full plate armor, which requires a higher strength to wear. In fact for most classes a 14 Dex is the maximum AC help provided by Dex.

So agility is how that's done? Or is it brute strength to wear the HEAVY plate mail? The argument I am contending against is that strength = agility.
In fact for most classes a 14 Dex is the maximum AC help provided by Dex.
Any class that can wear armor can reach a 17 AC with studded leather and a 20 dex. That's only 1 single point of AC less than plate mail. A single point of difference in AC doesn't mean much. And that 17 is reached with 52 fewer pounds of armor!! Nearly 4 times the weight of the studded armor to achieve a single point more of AC means that the strength isn't doing much of anything.
 

Delete Acrobatics.

put everything in Athletics,
then use rule that you can use different abilities for different skill checks,
Most of the time it will be STR(climbing,jumping,swimming,breaking), but some of the time it will be DEX(balance, tumble) or maybe even CON(endurance checks).
