I think saying "sake is fermented rice" is about like saying "beer is fermented barley." In both cases the sugars are extracted by malting (or something similar) and brewing, and then those sugars are converted to alcohol by yeast (or, I think, some other kind of friendly fungus in the case of sake, which might about the same step in the process as malting barley).

Nope, sake production uses yeasts.

There is a little difference from other brewing processes. When you are brewing other starchy foods (like in making beer) the starch -> sugar and the sugar -> alcohol steps are separate, but in brewing sake they happen simultaneously.

I knew the processes weren't identical, but I wasn't clear how. Thanks for the clarification.
 


The modern is typically rice vinegar, not fish vinegar. I don't even know what "fish vinegar" is. Vinegar is what you get when you allow fermentation processes to go farther than making alcohol - and that fermentation process needs sugars, which fish isn't rich in. But if someone had a cite on that, I'd be interested.

I was referencing your post about putting fish into rice to ferment. I short-handed it to "fish vinegar." I'm thinking something like an anchovy sauce. But with rice vinegar.
 

Re. is poutine pie?

Correct me if I'm wrong, but isn't pie in the States always a dessert? Cos if so, I'm okay with poutine being pie. I'd prefer it to have crust on it somewhere but I'm flexible.
