Based on your description of combat I don't think that you've ever had "a 5e DM" who was actually using 5e monsters from wotc either so that doesn't change much and raises the obvious question of how you think they stop the players from just saying "ok long rest"?I have never had a 5e DM that would just allow that whenever the players want.

Based on your history on these kinds of topics I have zero doubt that you of all people would not react to that with extreme umbrage through a long & protracted debate over "why not here" & "why not now" followed by immediately taking steps to meet the letter of those answers in order to take a rest here & now or here & now after "ok we waut N hours & take a long rest""You can't take a long rest right now."

the fact that one is talking about a couple of days whereas the amount of downtime required to create an item of notable worth is 50 days might have something to do with it.I find this side topic amusing. Over in the 2024 magic item crafting thread, there are people saying it's easy to deny players downtime to craft making it impossible for them to do so.
Here we have people saying it's hard to deny players the ability to long rest whenever they want.
I have been using gritty rests, but I feel for certain sort of campaigns even longer long rests would be beneficial. Like three months or something. You would have an adventure, then retire to a safe place to recuperate for a season, and perhaps do some downtime activities to craft and manage the bastion. It would create more meaningful passage of time, where the character reaching high levels would perhaps take decades.
