Except nothing says the creature can find you if you’re in its line of sight.
This is represented by Active (Search) or Passive Perception Checks in combat. Outside combat, the DM still uses stealth checks or can make the call to determine if circumstances allow for hiding based on narrative. That's how I would interpret this using Line of Sight rules in page 45 of the DMG

You are making a lot of assumptions about things the text does not actually state. Which is great for you, but I don’t think the rules should leave that up to you to make those assumptions.
 

I feel like hiding is like those dog videos where the puppy thinks its hiding under the blanket, but its tail is sticking out and wagging like a flag in the wind. The dog thinks its hiding, but you know where he is.
Anyone can only ever think they are hiding.
This was a better formed thought in my head.
 


Quick question: if you must be out of any enemy's line of sight in order to take the Hide action, why are you trying to hide in the first place since they already can't see you???
Historically, there's this concept that once hidden you can move sneakily, moving into areas where they'd be able to see you if you weren't keeping to the shadows, etc.

Mechanically, it's also to give rogues something to do with their bonus action so they can hide then attack and get advantage (and sneak attack). Steady Aim negates a lot of that reason, but this is before that.
