An elf does not polymorph into a dragon of the same age. Treat the different age categories as different creatures you can polymorph into. You can choose any dragon of any age category that you meet the HD and size conditions for.

Since the cleric spells are cast as arcane spells, I would say that the dragon only knows a number of spells as a 5th level sorcerer, but can choose from any list of wizard, cleric, and the domains listed. Dragons are powerful creatures.
