Because you have Alert, or a weapon of warning, or Foresight, and you know something's up, but you don't know what. You've never had that happen to you, that you knew something was going to happen right before it did? For some D&D characters, that happens, all the time.

This is only a difficult concept for you, I presume, because it eliminates the possibility of autowinning everything without the possibility of actual opposition; that's not the experience D&D 5E is built to deliver, which is why the mechanics of it are working so hard against you here.
