It’s not a cop-out, it’s a very intentional choice, directly connected to the setting’s origin for Tieflings.

Also a very intentional choice, as one of the main goals of the setting rework was to universalize the deities and get rid of species-specific gods. Correllon is the god of the arts rather than the god of elves, Moradin is the god of the forge rather than the god of dwarves, etc.
It is a very well considered pantheon...which is part of why it has worked so well for Critical Role.

So would probably cherry pick FR, 4E and Pathfinder gods. Maybe a rare few from

Fairly typical gods or sun, moon, war etc. Probably an earth mother.

Sure, but it's to much of an overlap for D&D.

That's why in Oerth, he's more of a strong warrior god. Storms is thrown in there.

Honorable Warrior God and Chaotic Storm God doesn't mesh.

Having the Land Goddess and the Sea Goddess be the same thing clashes.

Better to take Storms from Kord and Sea from Melora and make an Ocean Goddess.

Also Giants were the creations of the Primordials in 4e, so it makes sense that there is no god(dess) for them the same way their is no god(dess) for Genasi.

Again that is setting specific.

4e was smart to find excuses to limit the roster of gods but it only works for a Pantheon war setting.

And even then that technically put the Primordials on the level of gods. Therefore the creators of Giants and Genies would count. They just might overlap.

That's before we even get to the Mycean approach which, we know little of due to Linear B being Linear B, but he started as an underworld god with no evidence of ocean links, but absolutely the earthquake and horse ones. You say clash, I say raises interesting things about the history of worship and how things have developed
