This time of year, besides spiked eggnog, I look for some kind of a Cafe Oscar:


I usually substitute a coffee liqueur instead of a chocolate one when I’m making them at home.
 

Last night my date requested something with a bit of holiday spirit, and I didn't have any specific ingredients so did a little googling based on what I had on hand. Wound up settling on an Enchanted Forest:
  • 2 oz gin
  • 1 oz green Chartreuse
  • ½ oz fresh lemon juice
  • ½ oz honey syrup
  • Ice cubes
  • Fresh rosemary sprig and a lemon twist for garnish
Instructions:
  1. Chill a glass by filling it with ice.
  2. Combine the gin, green Chartreuse, fresh lemon juice, and honey syrup in a cocktail shaker.
  3. Add ice to the shaker and shake well until the mixture is thoroughly chilled.
  4. Strain the mixture into the prepared chilled glass.
  5. Garnish with a fresh rosemary sprig and a twist of lemon
Instead of honey syrup I used Tamworth Distillery's Apiary Gin, which is flavored with honey, and regular simple.

This was delightful, though obviously pretty boozy. Some nice rich and sour notes balanced with just a bit of sweetness. Rosemary on the nose gives that extra dimension and sense of "forest".
This looks like fun!

My understanding is that green Chartreuse is much harder to find these days (and, never having had it, I don’t have any on hand). Any decent substitutes?

There are a few that have popped up in recent years - Genepy is a similar liqueur that has been used as a sub. It’s good on its own and as a sub for Chartreuse, there’s definitely a resemblance. The nature of the liqueur makes it that while it’ll not taste quite like Chartreuse in a cocktail, it will certainly work in a cocktail. I’ve heard of another called Faccia Bruto Centerbe that people like but have not seen it or tried it yet.

It's not always in stock but I've continued buying Chartreuse. They didn't ramp up production but I think part of the shortage was people stocking up with the monks announced they weren't increasing production.

Locally, it’s an available twice a year thing here and you just have to keep an eye out. But it’s findable. The Yellow is actually the harder one to get, I think.
