D&D 5E Draconic Sorcerer questions

So I was lookin at sorcerer and I’m confused about the dragon ancestry. Wouldn’t picking a Fire based dragon always be better then the others? I see no reason why someone would pick anything but fire. Lightning Dragons too since there is Fireball and Lightning Bolt. Is there any benefits at all to choosing poison, acid, or cold?

More creatures are resistant to fire than any other element. Cold and lightning are close seconds. Fire, cold and lightning can damage objects, while poison does not.

Fire Adept fixes that problem with resistance, and I want to say that poison is the type must creatures are immune to.

Fire is unusually considered the best option. Unless you can persuade your DM that your ancestor was a thunder dragon or shadow dragon.

Since you can use spells that do different types of damage, the frequent benefit is the resistance. Fire and poison are going to come up a lot in most games.

There was an 'Elemental Adept' feat the let you change the damage of spells from one element type to another published in Unearthed Arcana a while back.

Also, consider this is an RPG - role playing game. All of my dragonborn have been Copper Dragons because they're tricksters and I'm a $%@#.
