Everything super-weird from the Planescape bestiaries. Particularly the mute race that talks in pictures.
Gorgon and Nymph were the big two I was surprised to see absent. It also would have been nice to see the Kirin, the other two Sphinxes and at least a couple of unique fiends. I've actually never used a demon prince or anything similar in a game, but they are still fun to read about.
The AD&D monster manual had a huge number of "sexy" female monsters, and these were all removed from 5e or given male counterparts in order to be more inclusive, which is not necessarily a bad thing. I'm glad the majority of them were removed, because they were redundant IMO, even if mythology is full of such things. I still wish there was a least one though, just for old times sake.
Wow is there really no Nymph in the MM? That's a pretty iconic creature from all prior MMs.

Besides my Astral Dreadnought post above;
I miss that rarer demon/devil from earlier eds that had like an Anubis head and multiple arms with heavy claws. I'm not sure why but both me and my players love that monster.![]()
