how about call it whatever, like Holy Dude without a god, because it is just a game mechanic. Ask your character what class he is and he should respond the same way we does when you ask him what his BAB is. Unless you have a caste system... My point is that the class name doesn't realy matter as long as you have something to call a character in game. This may vary from region to region, by power-level, etc. There may be slang terms for a priest like this, w/o a god. Just a thought, but be sure that I am taking notes of the names listed here.
