Between Borges and Lem, you've got an embarrassment of riches. I don't think I've seen a collection that has all of Borges' imaginary book reviews, but Lem's got three, I've come to find out. There's A Perfect Vacuum (imaginary book reviews), Imaginary Magnitude (imaginary book prologues), and One Human Minute (more reviews -- I haven't gotten it yet). I don't think there's a similar collection for Borges.
