I've been out of town for work, and I haven't been able to check these forums very regularly for the last week or two. Well now I'm back, and things...feel a little different in the forums. Nothing major, just a little off. Threads I expected people to be excited about are quiet; threads that I expected to be ignored are hot topics. Folks who haven't posted in years are back, and folks who usually post several times a day are taking a break.

Is it all in my head?

A certain person has decided to organize fans of his work to brigade otherwise-neutral gaming sites. I'm left wondering, how would I tell if they were able to do their business here? I mostly just keep to this thread -- they're unlikely to go here!
 



Well, I'm not gonna be deterred. It's Christmastime, and nothing says "festive" like PINEAPPLE. Bake this cake and put it on the table with all the other desserts: it'll be a refreshing, fruity counterpart to the usual mint- and cinnamon-flavored offerings.

CleverNick's Pineapple Upside-Down Cake
(all ingredients at room temperature)

Topping Ingredients:
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 can of pineapple rings
  • Candied cherries, red
  • Candied cherries, green
Cake Ingredients:
  • 1-1/2 cups cake flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 stick unsalted butter
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/3 cup yogurt (plain, vanilla, or pineapple)
  • 1 tsp. vanilla extract
  • 1/4 cup of the syrup from the canned pineapple rings
  • 1 oz. rum
Instructions for the topping:
  1. Take out your cast iron skillet. Melt the butter in it, then add the brown sugar.
  2. Cook on medium heat, stirring constantly, until the sugar melts.
  3. Add the pineapple rings and cherries, in a decorative pattern.
  4. Remove from heat and set aside.
Instructions for the cake:
  1. Preheat your oven to 350°F
  2. Sift the flour, salt, baking soda, and baking powder together, then set aside.
  3. In a stand mixer, cream the butter and sugar together.
  4. Add the eggs, vanilla, and yogurt to the butter/sugar mixture. Beat until smooth.
  5. Add half the flour mixture, stir until combined.
  6. Add the pineapple juice and rum, stir until combined.
  7. Add the remaining flour mixture, stir until combined.
  8. Pour the cake batter over the pineapple/sugar mixture in the cast iron skillet, spread it smooth, and put it in the oven right away.
  9. Bake for ~45 minutes, or until a cake tester comes out clean.
  10. Let cool for 15 minutes (exactly), then turn out onto a serving plate.
  11. Slice and serve warm.

Honestly, i feel this way everywhere all the time lately.
Life feels very "winter is coming" at the moment.
 

It is lilely my own way of looking at things, but I can't read the post any other way than it suggesting the poster was alive and reading texts during the 19th century.
