In 5e you have to see the metal, so, not until you peel off the meat, at which point heating it would be moot in terms of combat effectiveness.

Then you have two things:
1) "How, exactly, does your PC know the chemistry of bone, when chemistry, and the periodic table that classifies calcium as a metal hasn't been invented yet?"

2) "There is a difference between metal atoms, and metal as a substance. Bone is made of proteins and calcium phosphate, not pure calcium. If the player argues to the point of insisting, let them. And then the next time they are hit with a bladed weapon in combat, so that the character visibly bleeds, have the enemy boil their blood due to its iron content. Then have a nice little talk about rules-wheedling based on terms with multiple meanings, and ask if they really want to go through the game this way.

(Edit to note: I don't actually advocate using in-game action to solve out-of-game problems. )
