That is a pretty common request that is usually easy to accommodate (we used to do that for people). It is isn’t too bad, I tried it sometimes if I was dieting or just wanted the crunch). But getting mad or yelling at the help for not getting what you want would have gotten people tossed out at the place I worked as well. They may have had a good reason for not doing that at their shop. One cool thing I did learn working there is mustard on a salt bagel is real good
