A steel-shod staff isn't really capable of being wielded one handed. Also, it has metal in it, which quarterstaves in previous D&D editions didn't (a requirement of shillelagh, if I recall correctly, but not one in 5E).
Friar Tuck demonstrates the preferred one-handed quarterstaff technique (also works with a buck-and-a-quarterstaff).

A quarterstaff house ruled to be 2 handed only.
As has already been said, the D&D 'versatile' version seems to be a bit of a mess, as 6' staves were simply never single handed weapons.

Quarterstaff used to be a 1d6 damage two-handed weapon although I would allow 1d4 one handed. No way is it equivalent to a spear. No way. Sorry. I don't care how cool your monk looks spinning it around. Both staff and spear also have reach. Why use a staff then? It has other sublime advantages. It is only a walking stick after all...
The same goes for the lance. It is a spear that does double damage only when couched on a mount.

Wow, so much logic. Tell ya what? You come to my place and I will let you hit me as hard as you can with your staff if you let me do the same with my spear...
