In the 3.5 PHB, table 5-1 indicates that each time you select weapon finesse it applies to a different weapon, and the effects do not stack. Pretty straight forward. On page 102 in the description of weapon finesse, there is no mention of the feat applying to only one weapon at a time, and appears to imply that the feat works for any light weapon.
I couldn't find any errata on this, and the old 3.0 PHB is very clear that weapon finesse only applies to one specific light weapon per selection of the feat.
So what's the "official answer on this one? I think they forgot to update table 5-1 to mesh with the new broader version of the weapon finesse feat.
