No races leap to mind.
The Sorcerer can't ever really have enough sub-classes and I'd personally like some take on a 'Weaponmaster' fighter, but aside from that there's been a lot in UA, enough that I'm happy to run PH-only games.

There are still some full classes missing: the Warlord's the only one missing that was in a PH1, the Avenger, Shaman and others were in a PH2. There's classes like the Warden, Warblade, Swordsage, Swordmage, Knight, Scout, and others that are represented only by a single sub-class, and that perhaps tenuously. The Mystic is trying to be all psionics, but covering Psionicist, Wild Talent, Psion, Phychic Warrior, Soul Knife, Ardent, & Battlemind is kinda a tall order.

And, yeah, I'd like to see PrCs. There are some concepts, particularly setting-specific ones like the PDK, for which they are ideal.

I'm not. I suppose I should really expand a bit. With the way 5e is structured with feats and backgrounds, I can already pretty much cover any archetype I've wanted. I don't want to see class/subclass bloat. I think it dilutes things too much. Especially if it's the official WoTC team doing it. I wouldn't want them to spend the time and energy to keep churning out subclasses that only a tiny number of people would actually play. I'd much rather see more short adventure modules, or more feats. Speaking of, I would be totally for additional feat packages, because that's all I really think you need. Of course this is just by opinion. As far as I can see, there is really only one missing class: a psionic one. That's about it. Everything else could be a racial or general feat package, IMO.
 

Subclasses I'm waiting for...

Barbarian- Whirling Dervish and one that actually lets you transform like a lycantrhope
Bard- A Divine inspired Bard
Cleric- Elemental domains, Charm/Beauty Domain, and a Travel domain
Druid- Swarm/Vermin circle and possibly one that grants an animal companion
Fighter- Phalanx Fighter, Gladiator, Grappler
Monk seems pretty well covered to me
Paladin- Oath of Freedom
Ranger- Urban Ranger/Bounty Hunter, Magehunter
Rogue- Thief-Acrobat, Divine Trickster, Spy, Courtier
Sorcerer- Fiendish, Fey, Primal origins and a more Gish (battle maybe?)
Warlock- Ancestral, Primal, Elemental/Genie pacts
Wizard- Blood, Astronomy, Alchemy, Runes/Sigils/Circle magic

I'm not sure that there are any races that I am clamouring for, but there are a few subclasses that I think are missing, in particular for the cleric. I think the cleric could need some domains for the rest of the elements, mainly earth, water, and frost. A darkness domain would also be useful. A warlock subclass for the sha'ir, a wizard subclass that focuses on the use of the spellbook (a lore master of a different type to the original UA loremaster). Paladin could use an oath of the death knight focusing on undead thralls and death magic. Fighter could use a "spell-less ranger" subclass, currently the outlander background works kind of well with this concept but I'd like to see some subclass abilities.

Really though, I think I mainly just want to see how WotC would do these subclasses, I'm happy to homebrew these as needed and have already created a sha'ir subclass. Now that I've started creating subdomains for clerics, altering the primary domain as needed to fit a particular god, I'm not as concerned about not having the full range of domains.
