Cookin again

Caesar salad. I threw togather the other night with some roasted cashew nuts costed in seasoning and paprika.

And some miniature steak and pepper savories. 12 for just under $3 usd. Not as good as a full steak and pepper pies but better than expected.

Here’s a related thread I had forgotten about, but just resurrected.

 

You should try this.

Apple Cabbage Stew
1 medium head of red cabbage, cored and cut into confetti
2 Granny Smith apples, peeled and cored and sliced thin
1 large red onion, diced
2 cloves of garlic, minced
1 Tbsp. olive oil
1 tsp. salt
1 teaspoon caraway seeds
2 Tbsp. apple cider vinegar
1/4 cup raw honey
1 quart of vegetable broth

1. Heat the oil in a large soup pot.
2. Add the onions, apples, cabbage, caraway seed, garlic, and salt.
3. Cook until the onions are translucent.
4. Add remaining ingredients.
5. Bring to a boil, then reduce heat and simmer until all is tender (about 30 minutes)
6. Adjust the amount of vinegar, honey, and salt to taste.

Serve hot, with a side of toasted sourdough.
 


Empanada burritos. Chorizo. Eggs. Cheese. Potatoes. Peppers. Rice on the side.

Cook the rice.

Cook the chorizo. When it’s almost done add the diced potatoes. Cover and cook 5-10 minutes. Push to one side and tilt the pan the other way to let the grease flow. Add the eggs and cook 1-2 minutes until eggs just set. Mix everything. Add cheese. Cover to steam/melt. Add diced peppers. Mix again and serve.
