Here’s what I wrote up for a resort chef in Norway. I took pains to be as thorough as possible because others would be reading it. Bonus, there’s a link to a roux tutorial, which should work with any kind of flour substitute. (Roux is deceptively simple, but if you mess it up, it’s not salvageable.)

That said, pineapple might not improve it.
I'm not sure there's "versions" of gumbo so much as there is "this is what we had in the kitchen at the time we were making it" gumbo.Are there versions of gumbo that use sweet components as a matter of course? (I'm just curious since most gumbo is off the table for me since I dislike seafood, so I've only really had various that were just chicken and sausage based).
