D&D 5E Battling cleric

Sounds good. Max damage shatters are also nice. 18Str will allow you a lot of things. Most of that versality to do exactly what you are writing. 20 Str, resilence con. IF I see it correctly, if you swap wis and str, you may end up with 19 Str and 15 Wis, or 18Str, 14Con and 15Wis. Which does not matter too much, since you can increase odd stats first.
All your routes are perfectly viable with some more versatile, some more straight damage, some more defense. Maybe just start with what you like best and when you are playing you will see how the game works out and what is expected frm your character. Just take the ASI or feat that works best. What we are doing here is nice and all, but the game itself often works differently than what we expected.

A lot of the Cleric's offensive power comes from Bonus Action - whether you're running Spiritual Weapon, Using the bonus attack on War Domain or maybe you've chosen to wield a Club, whatever it is you have to use resources to make your offensive power work.

My recommendation to buff your power is to use Shillelagh by taking the Feat Magic Initiate. You get a second cantrip, of which thorn whip is a reasonable choice (especially if you're running spirit guardians, you can whip a creature into your AoE). As for a 1st level spell you are free to take Goodberry, which essentially you can cast each day for 10points of free healing (if you were a Life Cleric, it'd be 40 points of free healing a day instead of 10).

In actual fact, you can't play a Variant Human Life Cleric Magic Initiate where I take Goodberry, Shillelagh and Thorn Whip because I want to... go away! *snicker*.
 

One thought I had after reading the responses was that perhaps gwm is too swingy: perhaps just using a maul with a higher strength and spiritual weapon will be good for melee sprinkled with some spirit guardians here and there. If I want to keep up spirit guardians, or call lightning or bless, I could keep my shield and fight with a one handed weapon even going so far as to dodge action. Therefore I am taking resilient (con) at 4th to complement heavy armor master taken at 1st. At 8th I will likely up str to 18, OR PAM or gwm if I found an item to up strength before then...

Thoughts? I like the multiclass suggestions but for RP am going single class cleric. As a doomsday warrior-preacher, it makes the most sense. As for my eldritch knight? He is taking magic initiate at level one with shield!
