As part of the attack action, yep. Elfcrusher is right, you can do one longsword attack. So I'm at 31 instead of 32.

Ive attacked you twice. You're now stunned and have taken 18 damage twice.

Going on average damage and your odds of failing 1 of the two Con saves (DC 14 vs your +6 - needing to make it twice on 8+).

Odds are you're stunned at the end of my second turn and you're on 11 (49=36) HP.

And its my turn, and I have 1 Ki point left.

Agreed?

31 was before your second turn. Ok, so you're doing the same thing on your second turn, except no agile parry, and instead flurrying and making two stun attempts?

No, one sword attack, and 3 unarmed attacks and I'll blow all remaining 3 Ki to stun you on turn 2.

You'll have 11 HP left, and will need to pass three saves.

Odds are you fail one.

I then get 3 attacks (2 with the sword and 1 with the fist) at advantage to kill you while youre stunned.

Which I easily do (without advantage the average damage does the job)

Edit: N/m, I'm wrong. Agile parry doesn't cost ki.

So we need to figure out the average result. Because you might not hit 3 times. In fact, the most likely is that you hit two times. But you might hit zero, one, three or four.

Hahaha!

At +7 to hit vs AC 17 and making 4 attacks on average I hit at least 2 times.

So you can make slightly over 2 saves.

Again, needing an 8+ twice alone means odds are in my favour that you fail.

And we're presuming you fail on the last attack, so you're already getting a huge benefit there.

If I hit with the first attack (and thats the save you fail), the remaining 3 this round attacks are made with advantage, upping my DPR considerably likely killing you on round 2!

Playing the percentages and the odds, the Monk wins.

He's definately not outmatched, even in a PvP with a Sharpshooter Crossbow expert Archery style Battlemaster Fighter (arguably the strongest Fighter) proficient in Con saves.
