Gotta love food from crossroads and melting pots. Diversity of people in a place gives us all the best food. Either lots of immigrants bringing their food to a place or historically lots of diverse cultures mixing gives us strong local food. Also, weirdly, historically poorer countries have to do more with less so develop more flavorful and varied foods. Which is also why colonizers tend to have bland native food because they’re rich, but boost their food by importing foreign foods. It’s why places like Spain, Turkey, Central and South America, India, Morocco, Vietnam, Louisiana, etc have some of the best foods. If we’re still around in 100-200 years, certain parts of the current US will have some fantastic local food.
