I want the best of both worlds: All the enhanced and updated effects, none of the alterations or additions to the story. Honestly, I'm a big fan of "Han shoots first", but it's the "Han meets Jabba" scene that I find most jarring in the revised Episode IV.

How about they just put all the options on one disk?

Letterbox only (sorry, but I think that's what most people would want anyway).

A friend loaned me Hardware Wars Special Edition on VHS so I could try to put it onto a DVD. Not sure about the success. That would be another case where it would be nice to get an official factory edition (it's only a 10-minute short: both versions on 1 disk!!!).

Were the original versions ever released on dvd?

Yes, but...

(They were released as bonus features for the 2008 release of the trilogy. However, the video was non-anamorphic and not the best quality. It's also worth noting that these really were the original versions, so it's just "Star Wars", not any of this "Episode Four: A New Hope" nonsense. :) )
