Do they use any kind of sauce/coating? If so, that's not impossible.
Even without sauce/coating, the spices used in the meat mixture could have gluten. And, since the gyro meat is typically a meatloaf of lamb and beef, there may be things like breadcrumbs in it as a binder. Lots of gyro meat you get in the store will involve a binder for the meatloaf. Traditional restaurants may be less likely to do so, I understand, but better safe than sorry.

They sneak it in as ā€œfillersā€ even in spice mixtures.

I live with folks with celiacs and it’s an issue frequently. If there is was a way for them
to use sawdust in place of wheat, it would be that instead ;)

Mostly it’s innocent but a barrier for my family.

I understand it often shows up in processed foods to increase the protein amount on the nutrient label. I've heard the same with milk proteins too, making them a problem for milk allergies.

I've been trying to reverse engineer spice mixes for my family and it astonishes me how many of them randomly add flours of various types to sauces that don't need it as thickeners. But it makes the spice pack seem fuller and for most of the population, it's a harmless addition.

I have celiac. You basically need to read every label. With stuff like spices, it is a good idea to check the website too because some times gluten isn't always clearly marked on the labels (there are a lot of foods and products where 'natural flavors' could mean a lot of different things). Eating out is very much at ones own risk. You learn over time what places are more successful at it than others, but it is a challenging condition to prepare food for (even I get things wrong sometimes cooking for myself)
